This spice blend is absolutely killer on fish, shellfish, chicken, beef, game, and sauces.

Ingredients
  • 4 tablespoons kosher salt
  • 2 tablespoons black pepper, ground
  • 2 tablespoons dried thyme
  • 2 tablespoons coriander, ground
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons smoked paprika
  • 2 tablespoons white pepper, ground
  • 2 dried bay leaf, crushed
  • 2 teaspoons cayenne pepper
Instructions
  1. If you have any of the ingredients in their un-ground form (peppercorns, coriander seeds, dried thyme, etc), grind in a coffee grinder, but not the coffee grinder you use for coffee because your coffee will never be the same. Alternatively, use a mortar and pestle.

  2. Combine newly ground ingredients with already ground ingredients.

  3. Store in an airtight container for up to six months.
