Wondering what to do with that fresh trout? Here's an idea!

Ingredients
  • 1 trout, filleted, pin bones removed, skin-on
  • 1 tablespoon canola oil
  • as salt and pepper
  • Herb Salad
  • ¼ parsley and/or cilantro
  • 2 tablespoons olive oil
  • 2 teaspoons lemon juice
  • 3 tablespoons olives, sliced (preferably castelvetrano)
  • 1 lemon slice for garnish
Instructions
  1. Place a non-stick pan over moderately high heat

  2. Add oil to the pan - just enough to coat the bottom of the pan

  3. Season both sides of the trout with salt and pepper

  4. Place the trout, skin side down, into the pan - pressing ever-so-slightly to prevent it from curling up

  5. Allow the trout to cook 90% of the way sitting on the skin

  6. Flip the trout to the flesh side for a couple seconds to finish off any translucent flesh

  7. Remove to a plate - flesh side down to keep skin crispy - and keep warm

  8. For the salad, add herbs, olives, lemon juice, oil, and salt and pepper in a bowl. Toss to combine.

  9. Garnish trout with herb salad and lemon for squeezing
