Moroccan-Style Venison Kefta

An excellent alternative use for ground game meat!

Ingredients
  • 1 pound ground venison
  • ½ yellow onion, fine diced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1 teaspoon turmeric
  • 2 teaspoons salt
  • ¼ teaspoons pepper
  • teaspoons cayenne
  • 1 garlic clove, minced
  • ¼ fresh parsley, stems and all, chopped
  • ¼ cilantro, stems and all, chopped
  • 1 tablespoon mint, leaves only, chopped
  • Yogurt Sauce
  • 1 Greek yogurt, plain
  • 1 garlic clove, minced
  • 1 lemon, juiced
  • 1 teaspoon salt
Instructions
  1. Combine yogurt, garlic, lemon and salt. Set aside.

  2. Combine the meat, spices, garlic, and herbs in a bowl. Let sit for 30 minutes to an hour to combine flavors

  3. While that combines, preheat grill, or grill pan, or oven

  4. Separate the meat mixture into 4 - 6 parts (depending on how big you want the skewers)

  5. Press each portion around a skewer in a sausage-shape, trying to keep them uniform to ensure uniform cooking

  6. Cook the skewers 4-5 minutes on each side being careful not to overcook

  7. Lightly warm pita or naan over grill, grill pan, or in the oven

  8. Spread yogurt mixture on the bread, then use the bread to remove a kefta from its skewer

  9. Enjoy!
