Yogurt Sauce
Instructions

Combine yogurt, garlic, lemon and salt. Set aside.

Combine the meat, spices, garlic, and herbs in a bowl. Let sit for 30 minutes to an hour to combine flavors

While that combines, preheat grill, or grill pan, or oven

Separate the meat mixture into 4 - 6 parts (depending on how big you want the skewers)

Press each portion around a skewer in a sausage-shape, trying to keep them uniform to ensure uniform cooking

Cook the skewers 4-5 minutes on each side being careful not to overcook

Lightly warm pita or naan over grill, grill pan, or in the oven

Spread yogurt mixture on the bread, then use the bread to remove a kefta from its skewer
